Add 1 tablespoon instant coffee or espresso powder for every cup up dry flour mixture used to make pancakes, waffles, or crepes. Alternatively, substitute an equal amount of brewed coffee for some or all of the water or milk normally used in the recipe. Use multi-grain flours and ground nutmeal in your griddle cakes, to boost coffee flavor and add fiber. Many fruits match well with coffee-flavored griddlecakes; top or fill with banana, unsweetened fresh or thawed berries, or sliced peaches, plums, or apricots.
